Juicy Turkey Skewers with Chef’s Secret Marinade
These turkey skewers are marinated in Chef Giorgos Tsoulis’ secret marinade, a simple yet flavorful blend of buttermilk, garlic, fresh herbs, smoked paprika, and lemon zest. The buttermilk gently tenderizes the turkey while the herbs and spices infuse the meat with aromatic Mediterranean flavors.

Juicy Turkey Skewers with Chef’s Secret Marinade
Ingredients
- 1 kg turkey breast cut in cubes sized 3×3 cm (1-inch)
- 500 ml buttermilk
- 5 cloves of garlic mashed
- 1 tbsp salt
- ½ tbsp black pepper
- 1 ½ tsp smoked paprika
- 6-7 sprigs thyme finely chopped
- 3-4 sprigs fresh tarragon
- 6-7 sprigs rosemary finely chopped
- 1 zest of lemon
- 2-3 red bell peppers roughly chopped
- extra virgin olive oil for cooking
To serve:

Instructions
- In a large bowl combine the turkey, buttermilk, garlic, salt, pepper, smoked paprika, tarragon, thyme, rosemary, and lemon zest. Mix well with your hands to ensure the turkey is evenly coated with the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 2–3 hours, or overnight for best results.
- Thread the turkey and red pepper pieces alternately onto skewers until all the ingredients are used.
- Heat a grill pan over medium-high heat and lightly brush the skewers with olive oil.
- Cook the skewers for about 15–20 minutes, turning occasionally, until the turkey is cooked through and golden brown on all sides. Alternatively, cook them over a charcoal grill for extra smoky flavor.
- Serve the turkey skewers hot with cooked rice and enjoy.
