Juicy turkey skewers marinated in Chef Giorgos Tsoulis’ secret marinade made with buttermilk, garlic, fresh herbs, and smoked paprika, then grilled until golden and flavorful.
In a large bowl combine the turkey, buttermilk, garlic, salt, pepper, smoked paprika, tarragon, thyme, rosemary, and lemon zest. Mix well with your hands to ensure the turkey is evenly coated with the marinade.
Cover the bowl with plastic wrap and refrigerate for at least 2–3 hours, or overnight for best results.
Thread the turkey and red pepper pieces alternately onto skewers until all the ingredients are used.
Heat a grill pan over medium-high heat and lightly brush the skewers with olive oil.
Cook the skewers for about 15–20 minutes, turning occasionally, until the turkey is cooked through and golden brown on all sides. Alternatively, cook them over a charcoal grill for extra smoky flavor.
Serve the turkey skewers hot with cooked rice and enjoy.
