Mediterranean Olive Oil & Parmesan Dip

This Mediterranean olive oil dip is a quick and flavorful appetizer made with extra virgin olive oil, balsamic vinegar, chopped olives, Parmesan, and aromatic herbs. It has a rich, savory taste with a gentle kick from chili flakes and plenty of Mediterranean character.

Serve it with toasted bread, breadsticks, crackers, or fresh vegetables for an easy starter or party snack. Letting it rest for a few minutes allows the flavors to meld, making every bite more delicious.

Ingredients
 
 

  • 100 ml extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon chili flakes
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • sea salt , to taste
  • 2 tablespoons freshly grated Parmesan cheese
  • 3 tablespoons finely chopped pitted mixed olives

Instructions
 

  • In a small bowl, combine the olive oil and balsamic vinegar.
  • Add the chili flakes, dried oregano, garlic powder, and sea salt.
  • Mix well, then stir in the grated Parmesan and chopped olives.
  • Let the dip rest at room temperature for 5–10 minutes to allow the flavors to meld.
  • Serve with toasted bread, breadsticks, or fresh vegetables.

Notes

Chef tip: For the best flavor, use good-quality extra virgin olive oil and a mix of green, Kalamata and black olives. Taste before adding too much salt, as both olives and Parmesan are already salty.
