Soy & Sweet Chili Chicken Wings
Chicken wings are always a crowd-pleaser, but Chef Felix Rice takes them up a notch with a glossy sweet chili and soy glaze that delivers the perfect balance of sweetness, saltiness, and gentle heat. Fresh ginger, garlic, and shallots add layers of flavor, while sesame oil brings a rich, nutty finish to the sauce.
The wings are first roasted to develop flavor and render some of their fat before being finished in the pan, where they soak up the sticky glaze and turn beautifully caramelized. Finished with sesame seeds and scallions, they’re ideal as a party appetizer, game-day snack, or casual dinner served alongside steamed rice and crisp vegetables.
Soy & Sweet Chili Chicken Wings
Ingredients
For the sauce:
- 3 tbsp sesame oil
- 3 garlic cloves , finely minced
- 1 medium shallot
- 2 tbsp ginger , grated
- 9 tbsp soy sauce (low sodium preferred)
- 3/4 cup sweet chili sauce
Chicken wings:
- 1 1/2 lb chicken wings
- 1 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp pepper
For garnish
- 1 tbsp sesame seeds
- 2 scallions thinly sliced
Instructions
- Preheat the oven to 350°F (176°C).
- Toss the chicken wings with the olive oil, salt, and pepper.
- Arrange the wings on a baking tray and roast for 20 minutes.
- While the wings are roasting, prepare the sauce. Heat the sesame oil in a large skillet or sauté pan over medium heat. Add the shallot and cook for 2–3 minutes until softened.
- Add the garlic and ginger and cook for another minute until fragrant.
- Stir in the soy sauce and sweet chili sauce. Simmer for 2–3 minutes, then reduce the heat to low.
- Remove the wings from the oven. Increase the heat under the skillet to medium-high and add the wings to the pan.
- Sear the wings for 3–4 minutes, turning occasionally, until they develop a deeper golden color.
- Toss the wings in the sauce and continue cooking for 2–3 minutes, allowing the sauce to reduce slightly and coat the wings.
- Transfer to a serving platter and garnish with sesame seeds and scallions before serving.
