Spanakorizo (Greek Spinach and Rice)

Spanakorizo (Greek Spinach and Rice with Tomatoes)
This is a traditional Greek dish similar to an Oriental pilaf that is made with rice, spinach and tomatoes. It's a great vegan side dish, but can also be enjoyed as a main dish.
Ingredients
- 200 gr Arborio rice
- 4 tbsp olive oil
- 1 onion chopped
- 3 spring onions finely chopped
- 700 ml vegetable stock
- 400 gr diced tomatoes
- 600 gr spinach cleaned
- 4 tbsp dill chopped
- salt
- pepper
Instructions
- Heat the olive oil in a pot on high heat.
- Add the onion and spring onions, lower the heat to medium, and sauté for 3-4 minutes until softened. Add the rice and sauté for another 1 minute.
- Add the broth and the diced tomatoes, lower the heat to medium, and cook for 20 minutes. Be sure to stir every 2 minutes to prevent the rice from sticking to the bottom.
- In the last 5 minutes of cooking, add the spinach and leave it to steam for a short while. Season with salt and pepper.
- When ready, add the dill, mix and serve.
