Tarator is a yogurt-based soup of cucumber, garlic, dill, sometimes walnuts and, in the heat of summer, even ice cubes to make it more refreshing. Legend has it that Bulgarians stole this recipe from the Greeks and appropriated after adding a little water.

    How to Make Tarator:

    1. Crush the walnuts into small pieces. Soak the bread in water to soften.
    2. Finely chop the garlic and add them to the bread together with the walnuts .
    3. Mix the ingredients with a blender. Thin out the mixture with water to the desired consistency.
    4. Cut the cucumbers into small cubes and finely chop the dill. Add them to the mixture and season with salt and vinegar.
