Kagianas: Greek-Style Scrambled Eggs with Feta & Smoked Pork
Kagianas with syglino and feta is a traditional Greek dish from the city of Kalamata. It’s made with scrambled eggs, feta cheese, tomatoes, herb and syglino, smoked cured pork meat. You can substitute syglino with pancetta or smoked sausages for an equally tasty dish (see more substitute suggestions below).
What is Syglino?
Syglino is a traditional cured meat from the Mani region in Peloponnese, Greece. Made by smoking pork with aromatic herbs and then boiling it with wine, oranges, and spices, the meat is preserved in olive oil or pork fat. This flavorful delicacy can be enjoyed warm or cold, as an appetizer paired with wine or ouzo, or as an ingredient in dishes like omelets and sauces. Once a homemade specialty, Syglino is now produced and packaged for year-round enjoyment while retaining its rich, traditional flavors.
Syglino Substitutes

Kagianas: Greek-Style Scrambled Eggs with Feta & Smoked Pork
Ingredients
- 1 kg grated tomatoes
- 250 g syglino smoked cured pork meat, diced – also see substitute section
- 150 g feta cheese crumbled
- 7 medium eggs
- ½ tsp granulated sugar
- salt
- pepper
- 1-2 sprigs of thyme for serving
Instructions
- Place a pan over medium to high heat and let it warm up. Add the pork and sauté for 1-2 minutes.
- Next, add the grated tomatoes and sugar, stir with a wooden spoon, lower the heat, and simmer until the sauce thickens and the tomato juices evaporate.
- In the meantime, crack the eggs into a bowl and whisk them. Pour the eggs into the sauce and continuously stir with a spoon until the eggs are cooked.
- Finally, add the crumbled feta, salt, and pepper, and gently mix. Once everything is well combined, remove the kagianas from the heat.
- Serve the kagianas hot, sprinkled with a bit of thyme.
