Honey-Sweetened Cottage Cheese Brownies
Cottage cheese may not be the first ingredient that comes to mind when making brownies, but it works surprisingly well. Blended until smooth, it adds moisture and richness (and plenty of proteins) to the batter while helping create a soft, fudgy texture.
Sweetened with honey and packed with cocoa and chocolate chips, these brownies deliver plenty of chocolate flavor without relying on large amounts of butter or refined sugar. They’re easy to make, naturally sweetened, and perfect when you’re craving a homemade chocolate treat.
Honey-Sweetened Cottage Cheese Brownies
Ingredients
- 170 g cottage cheese
- 2 eggs
- 60 ml olive oil
- 240 g honey
- 45 g cocoa powder
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ tsp baking powder
- 125 g all-purpose flour
- 50 g chocolate chips
Instructions
- Preheat the oven to 180°C (356°F), fan mode.
- In a food processor, combine the cottage cheese, eggs, and olive oil. Blend until smooth and fully combined.
- Transfer the mixture to a mixing bowl and stir in the honey, cocoa powder, vanilla extract, salt, and baking powder using a whisk until well incorporated.
- Gently fold in the flour until fully absorbed. Pour the batter into a 20 x 20 cm (8 x 8 in) baking dish lined with parchment paper. Sprinkle the chocolate chips evenly on top.
- Bake for 20–25 minutes, until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs attached. Allow the brownies to cool slightly before removing from the pan. Slice and serve.
