Halloween Whoopie Pies

Indulge in these delicious, fluffy whoopie pies, a perfect Halloween treat by Chef Giorgos Tsoulis!

These airy pies with creamy filling are not only spookily delicious but also perfect to add a touch of magic to your Halloween party! The soft, moist cakes sandwich a smooth orange-colored filling, creating the perfect balance of texture and flavor.

Decorate them with spooky designs (critters and spiders are our favorite), or even candy eyes to make them the star of your Halloween dessert table.

Ingredients
 
 

For the filling:

  • 270 g cream cheese
  • 250 – 300 g powdered sugar
  • 60 g butter at room temperature
  • Orange food coloring

For the cookies:

  • 250 g all-purpose flour
  • 200 g brown sugar
  • 120 g butter at room temperature
  • 100 g cocoa powder
  • 160 ml buttermilk
  • 1 pinch salt
  • 1 medium egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • Black food coloring

Instructions
 

For the filling:

  • Combine the cream cheese and butter in a mixer bowl. Beat with the whisk attachment until the mixture is fluffy. Gradually add the powdered sugar, continuing to mix until fully incorporated.
  • Add the food coloring and mix again. Once the filling is ready, transfer to a bowl, cover with plastic wrap, and refrigerate for 2 hours.

For the cookies:

  • Preheat the oven to 175° C/350° F, at convection setting.
  • In a separate bowl, combine the flour, cocoa powder, and baking soda. Mix well and set aside.
  • Cream together the butter and sugar in a mixer bowl on medium speed until light and fluffy.
  • Add the egg and vanilla extract, and continue mixing until well combined. Gradually add the buttermilk and the flour mixture alternately, finishing with the flour mixture.
  • Remove the bowl from the mixer. Scoop out a tablespoon of the dough and place on a baking sheet lined with parchment paper. Continue until all the dough is used up, spacing the cookies to allow for them to expand. Bake for 10 to 12 minutes. Allow the pies to cool completely.

For the assembly:

  • Remove the filling from the refrigerator, transfer to a piping bag, and fill the cooled pies with the cream. Serve and enjoy!

Notes

Chef’s tip: Leave space between them to prevent sticking during baking.
