Halloween Donut Eyes

Trick or treat? These terrifyingly delicious Halloween donuts resembling monster eyes from Chef Giorgos Tsoulis are the ultimate spooky treat that will delight both kids and adults!

Here are a few tips when making these donuts:

  • Be careful not to overheat the oil, as this can cause the donuts to burn.
  • When using leftover dough from the first batch of donuts, avoid rolling it too thin; aim for a thickness of about one finger.
  • The excess dough scraps from cutting out the donuts can also be fried and enjoyed.

Enjoy!

Ingredients

For the donut dough:

  • 500 g all-purpose flour
  • 80 g granulated sugar
  • 250 ml buttermilk
  • 50 ml olive oil
  • 4 g dry yeast
  • ½ tsp salt
  • ¼ tsp mastic
  • ¼ tsp ground mahleb
  • 1 medium egg
  • zest of 1 orange

For frying:

  • sunflower oil (or vegetable cooking oil)

For the glaze:

  • 300 g powdered sugar
  • 80 ml milk or water
  • 1 tsp vanilla extract
  • red food coloring

For decor:

  • Candies (yellow, orange or red color for maximum impact)

Instructions

For the Donuts:

  • Blend the sugar, mastic, and mahleb in a food processor until finely ground. Transfer the mixture to a large bowl, then add the buttermilk, olive oil, and yeast. Stir and set aside for 5 minutes.
  • Combine the flour, salt, and orange zest in the bowl of a stand mixer. Mix with a spoon, then add the yeast mixture and knead with the dough hook on medium to high speed for about 4 minutes.
  • Add the egg and continue kneading for an additional 6 minutes. Once the dough is ready, transfer to a large greased bowl, cover with plastic wrap, and leave to rise for 1.5 to 2 hours.
  • Once the dough has risen, transfer to a floured surface and roll out into a rectangle about 37 x 30 cm (14.5 x 12 in). Use a glass to cut out circles with a diameter of 7 cm (~3 in), and use the lid of a water bottle to cut out holes in the center of each circle.
  • Place the dough circles on a baking sheet lined with parchment paper, cover with plastic wrap, and let them rest for 30 to 60 minutes.
  • Heat a pan over medium to high heat and fill with sunflower oil to just above halfway. Fry the donuts in batches for 10-12 minutes, turning them occasionally, until golden brown on both sides and cooked through. Transfer each donut to a tray lined with paper towels to drain. Allow them to cool completely.

For the Glaze:

  • Combine all the glaze ingredients, except the red food coloring, in a bowl. Stir with a spoon until the mixture is smooth.
  • Transfer a small amount of the glaze to a separate bowl and mix in the red food coloring. Stir well and place the colored glaze in a piping bag.

For Decor:

  • Ice the donuts with the white glaze, then use the red glaze to create eye designs. Place colorful candies in the center of each eye and serve.
