These light and airy whoopie pies, filled with a creamy and luscious orange-colored filling, are not only spookily delicious but also the ideal way to add a magical touch to your Halloween celebration.
Combine the cream cheese and butter in a mixer bowl. Beat with the whisk attachment until the mixture is fluffy. Gradually add the powdered sugar, continuing to mix until fully incorporated.
Add the food coloring and mix again. Once the filling is ready, transfer to a bowl, cover with plastic wrap, and refrigerate for 2 hours.
For the cookies:
Preheat the oven to 175° C/350° F, at convection setting.
In a separate bowl, combine the flour, cocoa powder, and baking soda. Mix well and set aside.
Cream together the butter and sugar in a mixer bowl on medium speed until light and fluffy.
Add the egg and vanilla extract, and continue mixing until well combined. Gradually add the buttermilk and the flour mixture alternately, finishing with the flour mixture.
Remove the bowl from the mixer. Scoop out a tablespoon of the dough and place on a baking sheet lined with parchment paper. Continue until all the dough is used up, spacing the cookies to allow for them to expand. Bake for 10 to 12 minutes. Allow the pies to cool completely.
For the assembly:
Remove the filling from the refrigerator, transfer to a piping bag, and fill the cooled pies with the cream. Serve and enjoy!
