Skioufichta are traditional handmade Cretan pasta which are made with whole-wheat flour, water, salt and olive oil or butter.
This is a delicious skioufichta recipe with spinach & yogurt by Greek celebrity Chef Giorgos Tsoulis. It’s easy to make, light and vegetarian and goes great for lunch, dinner or even as an appetizer.
Skioufichta (Cretan Pasta) with Spinach and Yogurt

This is a delicious Greek pasta dish using skioufichta, a traditional handmade Cretan pasta. Skioufichta is usually made with whole-wheat flour, water, salt and olive oil or butter.
Place a pot full of water over high heat. Once boiled, salt and add the skioufichta, boiling 2 minutes less than the time indicated on the package, so that they come out al dente.
Place a pan over high heat. Once heated, add a little olive oil, the onion and sauté for 1-2 minutes.
Add the garlic, spinach and lower the heat to medium. Sauté, stirring with a wooden spoon, until the spinach loses its moisture.
Add the skioufichta, season with salt and pepper, stir and remove from heat.
Add the yogurt, parmesan, stir again and serve warm.
Notes
Chef’s tip: Pour the yogurt after removing the pan from the heat so that it doesn’t curdle.
