1. Provencal Vegan Stuffed Eggplants

These vegan stuffed eggplants will make you taste the rainbow with a combination of colourful vegetables and herbs for a satisfying vegetarian or vegan main dish. 4. Chickpea and Eggplant Casserole

Another vegetarian recipe with typical Middle Eastern flavours, more precisely of Lebanese origin. I really liked the slightly spicy taste. Eggplants improve its texture, so that this lentil dish is not just a bland porridge. The chickpea and eggplant casserole is ideal for cold days. Increase your temperature in seconds!

This made me suspect that it is one of those great dishes, invented and perfected by an exceptional housewife and which, being unpublished, risks being lost. Luckily Manu’s Menu saved us and shared their delicious eggplant rice recipe.

8. Teriyaki Eggplant

Today I present a recipe for eggplant stuffed with quinoa and lentils in Moroccan style. Why Moroccan style? Because in my opinion, the best eggplant recipes are Moroccan and Turkish. Lately, it’s getting harder and harder for me to eat meat products, be it due to the heat or due to my conscience or a mixture of the two, I don’t know. What is certain is that I try, at least in summer, to find veggie alternatives. That’s how I came across this eggplant chickpea curry. It’s so simple, you only need a few ingredients and it has that exotic and interesting taste that tickles your taste buds.
