Quinoa Savory Muffins
Ingredients
- 100 g quinoa cooked
- 150 g cheese grated
- 1 small pepper
- 4 mushrooms
- 2 eggs
- 1 handful of baby spinach
- salt
- pepper
Instructions
- Bring a small pot of water to a boil (twice that of the amount of quinoa). When the water starts to boil, rinse the quinoa well and boil for about 15 minutes.
- Mix the cooked quinoa with the grated cheese, diced peppers, mushrooms, chopped baby spinach, and eggs.
- Season the mix with salt and pepper to your liking.
- Divide the mixture into 12 muffin tins, greased with olive oil beforehand.
- Bake for about 25 minutes at 175 °C (347 °F). It’s so easy, and the result is a batch of savory and filling muffins that are sure to please even the pickiest eaters.
- They can be made with chicken, shrimp, ham, eggplant, greens, and different types of cheeses, so you can play around for your perfect combination.
