Bring a small pot of water to a boil (twice that of the amount of quinoa). When the water starts to boil, rinse the quinoa well and boil for about 15 minutes.
Mix the cooked quinoa with the grated cheese, diced peppers, mushrooms, chopped baby spinach, and eggs.
Season the mix with salt and pepper to your liking.
Divide the mixture into 12 muffin tins, greased with olive oil beforehand.
