Ingredients

3 teacups rice washed and drained
4 tablespoons Butter
2 tablespoons Olive Oil
1/2 chopped onion
6 cups (tea) warm water
1 cup (tea) raisins seedless black raisins
1/2 cup (tea) yellow raisins seedless
1/2 cup (tea) cashew chopped
2 garlic cloves crushed
salt to taste
1 cup (tea) Brazil nuts chopped

How to Make Arroz Natalino:

  1. Heat a pan with half the butter and oil over a medium heat and fry the garlic until golden.
  2. Add the rice and sauté for 3 minutes.
  3. Add the water and salt and cook with the pan half covered until the water has almost evaporated.
  4. Lower the heat, cover the pan, and cook until the water is completely dry and the rice is tender.
  5. Take off the heat, transfer to a platter, and set aside.
  6. Heat another pan with the remaining butter and oil over a medium heat and sauté the onion, raisins, and chestnuts for 3 minutes.
  7. Spread over the rice on the platter, decorate with carambola and nuts and serve.
