French White Chocolate Cream Dessert

White Chocolate Cream Dessert

This elegant white chocolate cream is a smooth, custard-style dessert made with just a few simple ingredients: cream, egg yolks, and white chocolate. The result is a rich yet delicate dessert with a silky texture and a balanced sweetness that pairs beautifully with fresh berries. Served chilled in small jars or ramekins, it’s a refined treat that feels special while remaining surprisingly easy to prepare.

The key to achieving the perfect texture lies in gently tempering the egg yolks and carefully controlling the temperature of the custard. By slowly whisking hot cream into the yolks first, you prevent them from curdling when they are added back to the pot. Cooking the mixture to about 88–90°C allows the yolks to thicken the cream into a smooth custard without scrambling. Once the white chocolate is stirred in off the heat, it melts into the custard and adds richness and structure, creating a velvety dessert that sets beautifully as it cools.

Ingredients
 
 

  • 250 g white chocolate finely chopped
  • 300 ml heavy cream
  • 3 medium egg yolks

For Serving:

  • blackberries or any other fruit of choice

Instructions
 

  • Place a small pot over medium heat, then add the heavy cream and heat it slightly without bringing it to a boil.
  • Place the egg yolks in a bowl and beat them with a whisk. Slowly add a small amount of the hot cream to the yolks while whisking constantly to temper them.
  • Transfer the mixture from the bowl to the pot and stir constantly until the mixture reaches 88-90°C (190-195°F). Use an instant-read or probe thermometer to read the temperature as it's the easiest and most reliable way to do it.
  • When it reaches that temperature, remove the pot from the heat, add the white chocolate and stir until the mixture is smooth and well combined.
  • Pour the white chocolate cream into jars and allow to cool (keep it in the fridge until ready to serve).
  • Top with blackberries or any berries you like, then serve and enjoy!

Notes

Chef’s Tip: Add a little hot cream to the eggs while whisking to temper them and prevent curdling when they are added back to the cream.
