A silky French-style white chocolate cream made with egg yolks and heavy cream, this elegant dessert is simple to prepare and perfect served with fresh berries.
Place a small pot over medium heat, then add the heavy cream and heat it slightly without bringing it to a boil.
Place the egg yolks in a bowl and beat them with a whisk. Slowly add a small amount of the hot cream to the yolks while whisking constantly to temper them.
Transfer the mixture from the bowl to the pot and stir constantly until the mixture reaches 88-90°C (190-195°F). Use an instant-read or probe thermometer to read the temperature as it's the easiest and most reliable way to do it.
When it reaches that temperature, remove the pot from the heat, add the white chocolate and stir until the mixture is smooth and well combined.
Pour the white chocolate cream into jars and allow to cool (keep it in the fridge until ready to serve).
Top with blackberries or any berries you like, then serve and enjoy!

Chef's Tip: Add a little hot cream to the eggs while whisking to temper them and prevent curdling when they are added back to the cream.
