Turkey Scotch Eggs with Siracha Mayo

These mouthwatering treats blend the classic comfort of Scotch eggs with a modern twist. Imagine perfectly seasoned turkey sausage hugging a soft-boiled egg, all encased in a crispy, golden breadcrumb shell.

Turkey Scotch Eggs with Siracha Mayo

Ingredients
  

  • 6 eggs
  • 300 g turkey mince
  • 50 g pork mince
  • 5 g miso
  • 12 g ginger pureed
  • 14 g chilli finely diced
  • 3 fillet anchovies minced
  • 25 g confit onion roughly sliced
  • 2 g salt

Instructions
 

  • Place eggs into boiling water for 5m 30s. Remove eggs and place into ice water.
  • Combine mince and seasonings and divide into 6.
  • Encircle peeled eggs with mince and roll until smooth.
  • Place into the fridge uncovered to dry for 30 min.
  • Roll each egg with flour, dip in egg wash and coat with Panko breadcrumbs.
  • Fry at 160 °C/ 320 ℉ for 6min.
