3 tomatoes for the sauce
3 serrano chiles for the sauce
1/4 onions for the sauce
1 clove garlic for the sauce
1 tablespoon Oil for the sauce
1 tablespoon Salt
1/2 teaspoons Pepper for the sauce

8 Corn Tortilla
8 Eggs
1/2 teaspoons Salt
1/4 teaspoons Pepper
1/2 tablespoons Oil
1 can/ 440 g beans

Huevos rancheros traanslates to mean “ranch eggs” – the name of this dish represents two ranchmen. Huevos almost always consists of two eggs on two fried corn tortillas, and is often served with fried beans, salsa and sometimes cheese. It might be garnished with fresh cilantro or hot sauce as well… but no matter how you order this classic Mexican breakfast, you will love every bite, especially when all the components of this dish mix together on your fork… pure heaven!

How to Make Huevos Rancheros:

  1. In a comal over medium heat, pat the tomatoes, chilies, onion and garlic.
  2. Pour a splash of oil into it and fry the garlic and onion.
  3. When they are transparent we add the tomato and the chili. We let it cook for 10 minutes, we add a splash of water, so that our sauce for the Huevos Rancheros is soupy. We cover the pan. 
  4. Blend the ingredients until you get a homogeneous mixture.
  5. Heat the oil in a pot over medium heat, and add the sauce. Let it boil and fry for 5 minutes. Season and put aside.
  6. In a skillet over medium heat, heat the oil and fry the corn tortillas 1 minute. Drain on absorbent paper and put aside.
  7. In the same pan, fry the eggs to taste and season.
  8. Reheat the beans in a pan with oil.
  9. Serve two tortillas in an extended dish, place two eggs on top and serve with ranchera sauce and beans.
