Bramboráky (Czech Potato Pancakes)
Bramborák means potato pancake and is a Czech signature dish often served at Czech fairs, markets, and festivals, but also in traditional Czech restaurants.
They are very simple to prepare and will not glue you to the kitchen counter for long. Grated potatoes, crushed garlic, onion, milk, caraway, marjoram, flour, and eggs are mixed into a dough and, using a ladle, poured into a pan. Here they sit until golden brown and crisp on both sides and then go straight to your plate.
They pair very well with a cold beer, gouláš, or both!
Bramboráky (Czech Potato Pancakes)
Ingredients
- 2 lbs potatoes raw, peeled
- 5 cloves of garlic
- 1 egg
- 1/2 cup milk
- 2/3 cup all purpose flour
- 1 tbsp marjoram
- salt
- pepper
- 1 tsp caraway seeds
- pork lard or cooking oil
Instructions
- Finely grate the potatoes into a large mixing bowl.
- Heat up the milk in a small pot over the stone and pour it hot over the grated potatoes. Mix thoroughly.
- Then, add the minced garlic, flour, eggs, marjoram, caraway seeds, and salt. Combine until you get a semi-liquid batter.
- Add the pan or vegetable oil in a pan and heat up, the add a few ladlefuls of the potato batter in a pan, flattening each one slightly with the back of the ladle.
- Fry until the pancakes are golden brown on both sides, then transfer them onto a dish lined with paper towels.
- Enjoy hot or cold with a dollop of sour cream, if you like!
