African Peanut Soup
African peanut soup is a culinary delight savored across numerous West African nations. It features a sumptuous, hearty base crafted from tomatoes, peanut butter, and sweet potatoes, accompanied by delectable meat chunks.
This versatile dish comes in various iterations, incorporating beef, fish, chicken, or opting for a wholly vegetarian rendition. Our African peanut soup recipe is prepared with chicken, but feel free to swap chicken with your protein of choice or opt for the vegetarian version.
Pair it with a side of hearty rice (or over rice, why not?) and a sprinkle of crushed peanuts on top and enjoy!
African Peanut Soup
Ingredients
- 1 chicken breast rinsed and cut into pieces
- 4 tbsp peanut butter
- 2 tbsp peanut oil or any vegetable oil
- 2 fresh tomatoes mashed
- 1 tbsp tomato paste
- 2 onions chopped
- 2 garlic cloves
- chili pepper optional
- black pepper
- 1 boullion cube chicken or vegetable
- 3-4 cups water
- 1 ½ large sweet potatoes or carrots or pumpkin, (peeled, washed and cubed) optional
- chives or scallions (chopped, optional) for garnish
Instructions
- In a cooking pot, heat the vegetable oil and fry the chicken until brown and cooked through. Remove and reserve aside.
- Heat the vegetable oil in a large enough pot and add the chicken. Brown it on all sides and transfer it to a separate dish.
- In the pot, add the onions, tomatoes, tomato paste, crushed boullion cube, garlic, and pepper and fry the mixture for 10 minutes.
- Add the water, the peanut butter and the potato pieces. Stir it through, until well incorporated and cook for another 20 minutes on medium-low heat.
- The, add the chili pepper (as much as you like) and season with salt to taste. Stir and leave to simmer for another 10 minutes.
- Finally, place the chicken pieces in the sauce and cook everything for a further 10 minutes or so. Cook until the sauce gains your desired consistency.
- Serve your delicious African peanut soup with a side of rice or fufu and enjoy!
