Monster Burgers

Who says Halloween fun has to be all about candy and sweet treats? These spooky monster burgers from Chef Giorgos Tsoulis are a fun way to turn an ordinary family dinner into something a little more festive. Made with juicy beef patties, soft brioche buns, and all the classic burger fixings, they come to life with jagged cheddar cheese teeth, pickle tongues, and funny little eyes made from olives. They’re almost too cute to eat!

The best part is that you don’t need any special ingredients or complicated cooking techniques to make them. Just prepare your burgers as usual, then have some fun assembling the monster faces. They’re perfect for a Halloween dinner with the kids or a spooky-themed party, and you can easily customize the toppings to suit everyone’s tastes. Serve them with fries or roasted sweet potatoes for a fun and satisfying Halloween meal.

Safety Tip: The monster eyes are secured with toothpicks, so be sure to remove them before eating. If serving these burgers to young children, remove the toothpicks before serving and cut the olives into small, age-appropriate pieces to reduce the risk of choking.

Ingredients

  • 2 beef burger patties
  • salt and pepper , to taste
  • 2 brioche burger buns
  • 2 slices cheddar cheese
  • 2 tbsp mustard
  • 2 lettuce leaves , washed and dried
  • 1 large pickle thinly sliced lengthways
  • 2 tbsp ketchup
  • 4 pitted olives stuffed with red pepper
  • 4 toothpicks , for decorating
  • olive oil (or vegetable oil) for cooking

Instructions

  • Heat a little olive oil in a large skillet over medium-high heat. Add the beef patties and cook on both sides, seasoning with salt and pepper, until browned and cooked through. The internal temperature should reach 160°F (71°C).
  • Remove the patties from the skillet and set aside. Add a little more olive oil to the same skillet, if needed, and toast the cut sides of the brioche buns until lightly golden.
  • Using a sharp knife, cut one edge of each cheddar slice into a zigzag pattern to create the monster's pointed teeth.
  • Assemble the burgers: Spread 1 tablespoon of mustard on the bottom half of each bun. Add a lettuce leaf, followed by a beef patty.
  • Place a thin pickle slice over each patty, allowing one end to hang over the edge of the bun like a tongue. Add the cheddar slice, positioning the pointed edge so it resembles the monster's teeth.
  • Spread 1 tablespoon of ketchup on the inside of each top bun, then place it over the filling.
  • Attach two pepper-stuffed olives to the top of each burger using toothpicks to create the monster's eyes.
  • Serve immediately, making sure the toothpicks are removed before eating.

Notes

Chef Tip: Cut the cheddar into sharp, pointed shapes to resemble monster teeth, and slice the pickle thinly so it hangs naturally over the edge of the burger like a tongue.
