This cheesy spinach and pepper breakfast bake is the kind of recipe that makes mornings feel a little more special without requiring much effort. Eggs, cheddar cheese, sweet red peppers, and spinach come together in a simple baked dish that's hearty enough for breakfast, brunch, or even a light lunch. The tortilla base helps hold everything together, making it easy to slice and serve straight from the baking dish.

Ingredients
 
 

  • 5 eggs
  • 1 cup red bell pepper diced
  • 1 cup shredded cheddar cheese (about 100 g)
  • 1 cup fresh spinach chopped
  • a pinch of salt
  • 1 medium flour tortilla

Instructions
 

  • Preheat the oven to 185°C (365°F) without fan (conventional mode).
  • Crack the eggs into a large bowl and beat them with a pinch of salt.
  • Add the diced red bell pepper, shredded cheddar cheese, and chopped spinach to the eggs. Mix well until the mixture is evenly combined.
  • Grease a baking dish with butter and place the tortilla in the dish.
  • Pour the egg mixture over the tortilla.
  • Bake for 30–35 minutes, or until the center is set and a knife inserted in the middle comes out clean.
