Cheesy Spinach and Pepper Breakfast Bake
Ingredients
- 5 eggs
- 1 cup red bell pepper diced
- 1 cup shredded cheddar cheese (about 100 g)
- 1 cup fresh spinach chopped
- a pinch of salt
- 1 medium flour tortilla
Instructions
- Preheat the oven to 185°C (365°F) without fan (conventional mode).
- Crack the eggs into a large bowl and beat them with a pinch of salt.
- Add the diced red bell pepper, shredded cheddar cheese, and chopped spinach to the eggs. Mix well until the mixture is evenly combined.
- Grease a baking dish with butter and place the tortilla in the dish.
- Pour the egg mixture over the tortilla.
- Bake for 30–35 minutes, or until the center is set and a knife inserted in the middle comes out clean.
