Ingredients

2 tbs honey

1/2 tsp ground ginger

2 tsp cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground cloves

1/2 tsp ground allspice

1/8 tsp ground cardamomif you have

2 tbs Plumsstrawberry / currant (or other favorite fruit) butter / marmalade

1/2 orange orange zest

2 Eggs
-
9 tbs / 125g Butter
-
1 cup / 250 g granulated sugar

1 cup / 250 ml Milk

2 cups / 300 g Flour

1 tsp baking soda
-
2 tsp Baking Powder

A pinch Salt

Additionally:

A few tablespoons Plumsstrawberry / currant (or other favorite fruit) butter / marmalade

Glaze:
-
1/2 cup whipping cream
-
3.5 oz / 100 g dark chocolate
Directions
Piernik/Gingerbread is very much associated with the Christmas season in Poland. And so, these tasty treats are often baked at home together with all the family to the sound of Christmas carols.
How to Make Piernik:
- In a small saucepan, place the honey, marmalade, orange zest, and spices and heat through. Set aside to cool.
- In a large mixing bowl, beat the butter and sugar.
- Add the eggs one by one and then the honey mixture, once it has cooled off, and the milk. Stir well.
- Preheat the oven to 350° F/180° C. Line a bread loaf pan with parchment paper.
- Mix the flour with the baking powder, baking soda, and salt.
- Gradually add the flour to the sugar/butter mixture and combine well.
- Transfer the mixture to the loaf pan and bake for 50-60 mins, or until an inserted toothpick comes out clean.
- Cool the bread completely before slicing in half horizontally from end to end.
- Spread marmalade onto the bottom part and put the top back on. Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Note: You can skip this step and spread some marmalade on each slice before serving.
- To make the glaze, heat the cream in a small saucepan. Remove from the heat and put in the broken up chocolate.
- Mix until melted and smooth.
- Cool the glaze slightly before pouring over the ginger bread.
