Guineos en Escabeche (Pickled Bananas)

Guineos en Escabeche (Pickled Bananas)
Guineos en Escabeche (Pickled Bananas) are a quite common side dish in summer, but during the Christmas season they are pretty much everywhere! In order to make this delicious dish you’ll need: greens bananas, vinegar, olives, bell peppers, olive oil, garlic, black pepper, bay leaves, parsley flakes, and onions.
Ingredients
- 8 green bananas
- 1 white onion medium/large, thinly sliced
- 8-10 green olives
- 1 cup olive oil
- ½ cup white vinegar
- 10-15 whole black peppercorns
- 2-3 bay leaves
- 2 cloves of garlic crushed
- salt to taste
Instructions
- Peel the green bananas and cut into 1-inch chunks. Place them in a deep pot with some salt and add enough water to cover them. Bring the water to a boil and cook for about 10 minutes until fork-tender.
- When the green bananas have done cooking, drain them well and transfer to a bowl and splash with some olive oil to keep them from changing color.
- Meanwhile, in a separate pot, add 1 cup of olive oil and place it over a medium-high flame until hot. Then add the rest of the ingredients and stir.
- When the mixture begins to bubble, turn the heat down to low and simmer for about 7-10 minutes until the onions have softened.
- Check for seasoning and adjust with more salt if needed.
- Once the vegetables in the escabeche sauce have softened, pour the mixture into the large bowl with the bananas and toss everything together to coat and homogenize.
- Leave the mixture to cool to room temperature, then refrigerate for at least an hour before serving.
