Drinking Garri (Granulated Cassava)

Garri (also called “gari” or “gali” ins ome parts of sub-Saharan Africa) is a fine to coarse granular flour of varying texture made from cassava tubers (the root of the cassava plant), which are cleaned after harvesting and then grated. The water and starch are squeezed out and the flour is left to ferment. It is then fried and eaten.
The most popular ways of cooking garri is to either make a dough with it and cook it in hot water and serve with various sauces, or to make a drink with it, especially as a cooling aid for the hot months. People often add sugar, groundnut oil or milk to it, making it a balanced meal or snack.

What to Serve with Drinking Garri:
A garri drink can be served with any of the following:

Drinking Garri (Granulated Cassava)
Ingredients
- ¼ cup garri
- 3 cups water
Optional ingredients:
- 3 cubes sugar or honey
- 1 pinch salt
- 2 tbsp milk or bournvita
- ice cubes
Instructions
- Place the garri in a small bowl and add plenty of water. Skim the surface of any dirt particles and carefully drain away the water.
- Add fresh, cold water to the garri, a little at a time, while stirring. Adjust the consistency according to your preference. Try to avoid making it too thick because it's harder to drink.
- Add as much sugar, salt milk or ice cubes as you prefer, stir well, and enjoy a cooling glass of Drinking Garri!
Notes
- You can prepare garri plain or with sugar or salt, or both together.
- Honey can also be used to sweeten the garri.
- Ijebu garri is the best garri for drinking.
