Brazilian Farofa with Eggs and Bacon

Farofa is one of the most popular side dishes in Brazil, and you’ll find it accompanying servings of fish, chicken, or meat. It’s made by frying manioc (i.e., cassava) flour with butter, garlic, and onions until toasted.

Ingredients
 
 

  • 100 g bacon chopped
  • 500 g cassava flour
  • 2 garlic cloves
  • 3 tablespoons olive oil
  • 1 medium onion chopped
  • 15 g parsley finely chopped
  • 10 g chives finely chopped
  • 2 eggs hard boiled, chopped

Instructions
 

  • Heat a pan with a splash of olive oil over medium flame and sauté the garlic and onion until softened.
  • Add the chopped eggs and bacon to the pan and fry until the bacon becomes lightly crispy.
  • Next, add the flour little by little, stirring to coat everything nicely.
  • Take off the heat and transfer to a dish. Sprinkle with parsley and chives and serve immediately.
