Ingredients
 
 

  • 5 cup peaches ,peeled and pitted
  • 3 garlic cloves minced
  • 2 shallots finely chopped
  • 6 oz tomato paste
  • 3 tbsp Dijon mustard
  • 3/4 cup brown sugar
  • 3/4 cup apple cider vinegar
  • 2 tbsp butter
  • salt to taste

Instructions
 

  • Melt the butter in a saucepan over medium heat. Add the garlic and shallots and sauté until soft and fragrant, about 3–4 minutes.
  • Stir in the tomato paste and Dijon mustard and cook for 2 minutes, stirring constantly.
  • Add the peaches, brown sugar, and apple cider vinegar. Reduce heat and simmer for 15–20 minutes, until the peaches are very soft.
  • Purée the mixture until smooth using a blender or immersion blender. Season with salt to taste and adjust sweetness or acidity if needed.
