Wash the ginger root thoroughly under cold running water, then slice it thinly. For a more intense flavor and color do not peel it.
Put all the ingredients in a saucepan and cook over low to medium heat for an hour.
Strain the syrup (about half a liter or about 2 cups) through gauze and store it in a tightly sealed bottle. It will keep in the fridge for up to two months.
For flavoring classic lemonade, mix one spoonful of syrup for every 200 ml (~1 cup) of lemonade and add some fresh mint leaves. Ginger gives the lemonade a very special flavor!
