1tablespoonvanilla essence/one sachet of vanilla sugar.
800gplumsfresh and pitted.
Optional:
nuts or almond flakes for decorating
Instructions
In a large bowl mix the oil, sparkling water, sugar, lemon juice and zest, vanilla, flour, salt and baking powder.
Mix until you get a soft, smooth and creamy composition, with no lumps.
Line a baking pan with parchment paper and preheat the oven to 180 ºC/ 356° F.
Pour the batter into the baking pan and place the clean plums on top and press gently (I removed the pits and pressed the halves together to keep the plums whole in the batter).
You can also sprinkle almond flakes or nuts on top.
Bake for 45-50 minutes at 180 ºC/ 356° F, no fan, until the batter cracks slightly and the edges turn golden brown.
Slice it after it has cooled for at least 10-15 minutes.
