Heat a skillet over medium-low heat and melt the butter thoroughly.
In a large bowl, combine the melted butter, sugar, flour, baking powder, baking soda, eggs, salt, milk, food coloring, and whisk until smooth.
In another skillet heated over medium-high heat, add a little butter. Scoop 2 generous tablespoons of the batter and pour them into the center of the skillet. Use the back of the spoon to spread the mixture into a round shape.
Cook the pancake on one side until small bubbles form on the top, then flip it with a spatula.
Once cooked, transfer to a plate. Repeat the process, gradually reducing the diameter of the pancakes to create a Christmas tree shape.
