Christmas Tree Pancakes

Ingredients
 
 

For the pancakes:

  • 2 medium eggs
  • 270 g all-purpose flour
  • 2 tsp baking powder
  • 6 g baking soda
  • 4 tbsp granulated sugar
  • 260 ml whole milk
  • 60 g butter at room temperature
  • green food coloring
  • salt
  • olive oil for baking

For the whipped cream:

  • 330 ml heavy cream
  • 80 g powdered sugar

For serving:

  • colorful sprinkles

Instructions
 

For the pancakes:

  • Heat a skillet over medium-low heat and melt the butter thoroughly.
  • In a large bowl, combine the melted butter, sugar, flour, baking powder, baking soda, eggs, salt, milk, food coloring, and whisk until smooth.
  • In another skillet heated over medium-high heat, add a little butter. Scoop 2 generous tablespoons of the batter and pour them into the center of the skillet. Use the back of the spoon to spread the mixture into a round shape.
  • Cook the pancake on one side until small bubbles form on the top, then flip it with a spatula.
  • Once cooked, transfer to a plate. Repeat the process, gradually reducing the diameter of the pancakes to create a Christmas tree shape.

For the whipped cream:

  • In a mixing bowl, combine the heavy cream and powdered sugar. Whip on high speed until soft peaks form, then transfer it to a piping bag with a star tip.

For the assembly:

  • Place the largest pancake on a large plate and spread whipped cream on top. Continue stacking the pancakes from largest to smallest, decorating with whipped cream in between.
  • Serve the Christmas tree, sprinkled with colorful truffles.

Notes

Chef’s tip: If you let the batter sit in the fridge for a day, the pancakes will turn out even fluffier and tastier!
