Turkish Style Potato Salad

Potato salad appears in almost every food culture. But the Turkish potato salad is something special.

Ingredients
  

  • 2 litre water
  • 4 large potatoes
  • 3 sprigs of spring onions
  • ½ bunch of parsley
  • juice of 1 lemon
  • 3 tbsp olive oil
  • ½ tsp  sumac
  • Salt, to taste
  • Pepper, to taste

How to make Turkish Style Potato Salad

  • Heat the water in a large pot, boil the potatoes in the hot water until fork-tender. 
  • Cool the boiled potatoes and peel them. Dice the potatoes into large chunks.
  • Finely chop the spring onions and the parsley.
  • Mix the potatoes, onions, and parsley in a large bowl. Add lemon juice, olive oil, sumac, and season with salt and pepper.
  • Make sure that all of the salad ingredients are well mixed, being careful not to mash the potatoes.
  • Serve cold.
