Ingredients

500 gr white chocolate chopped coarsely
1 cup (35g) rice bubbles
1 cup (160g) sultanas
1 cup (140g) macadamias roasted, chopped coarsely
1 cup (160g dried apricots finely chopped
1 cup (130g dried sweetened cranberries
3/4 cup (105g) pistachio roasted, chopped coarsely
1 teaspoon ground cardamom

White Christmas is a traditional Aussie dessert made from dried fruits such as glace cherries, desiccated coconut and sultanas, mixed with sugar, white chocolate, rice bubbles and coconut oil. Think of it as Chocolate Crackles’ white chocolatey, Christmassy cousin!

How to Make White Christmas:

  1. Grease a 20 cm x 30 cm rectangular slice pan; line the base and long sides with baking paper, extending the paper 5 cm over the sides.
  2. Chop chocolate coarsely.
  3. In a large heatproof bowl over a large saucepan of simmering water (do not let the water touch base of bowl), melt the chocolate. Remove from the heat and quickly stir in the remaining ingredients.
  4. Press the mixture firmly into the pan. Refrigerate for 2 hours or until firm.
  5. Cut into about 32 pieces to serve.
