2 pounds cod fillets or pike, perch, or salmon fillet
1/2 pound fish heads, and/or bones
8 cups Water
2 medium onions
1 stalk celery
2 large carrots
Black Peppercorns
1 bay leaf
2 springs fresh parsley
1 tbsp Salt
chopped fresh dill optional

Soups are considered a very healthy meal in Russia, and that’s why there are so many of them. Ukha is a traditional Russian fish soup, consisting, in addition to the obvious primary ingredient, of spices, potatoes, carrots, onions, and, less commonly, other veggies. Traditionally, with catfish, bream, or ruffe, but you can substitute whatever looks freshest at the grocery store. It’s very nutritious, rich, and savory.

Preparation:

  1. In a medium-large saucepan, place the fish bones and water and bring to a boil. Skim off any foam that rises to the surface.
  2. Add the onions, celery, carrots, peppercorns, parsley, salt, and again bring to a boil. Reduce the heat and simmer for 45 minutes.
  3. Remove the bones and strain, if desired, pressing on the vegetables to extract all the juices.
  4. Add the fish pieces and simmer for an additional 15 minutes or until the fish is cooked.
  5. Serve in heated bowls with fresh dill or chopped chives or green onions, if desired. Traditionally, the fish soup would be served with mini fish dumplings or mini fish pies.
