700 g new potatoes

1 tbsp Olive Oil

1 tbsp Chaat masala

1 tsp cumin seeds

Garlic Chutney:

1.5 tsp Lemon Juice

1/4 tsp coriander powder

2 garlic cloves

1 red chilli deseeded

1 tsp tomato paste

Lemon Raita:

4 tbsp yoghurtof your choice

1 small preserved lemon

1 tsp cumin seeds

Directions
This is one delicious dish that I promise you will be making over and over again…I mean who doesn’t love potatoes?
The potatoes are smashed, sprinkled with Indian spices and roasted till crisp, then they are topped with pickled onions and drizzled with lashings of spicy garlic chutney and a cumin and preserved lemon raita.
How to Make Smashed Masala Potatoes, Garlic Chutney & Preserved Lemon Rait :
- Pre-heat oven to 230C or highest setting and line baking tray with foil
- Boil the potatoes until par-cooked, then lightly crush them, sprinkle over the spices(masalas), lemon, olive oil and salt and place in the oven and cook for 25-30mins or until crisp
- In the meantime make the garlic chutney by blitzing all the ingredients together in a blender and season to taste
- Make the preserved lemon raita by blending all the ingredients together in a food processor and season to taste
- Assemble by creating a layer of the potatoes, drizzle over the red chutney and the raita, top with the pickled red onions, coriander and nigella seeds
