16 ounces blackberry jam

10 1/4 cups red wine

2 tbsp fresh mint leaves

Directions
Sbiten’ is a very traditional drink in Russia, possibly one of the most ancient, with its roots deep in Russian culture. It can be sweet, spicy, or both, all depending on the recipe. Honey is the key ingredient for this heart- and body-warming winter drink, which is boiled with spices and jam. Its popularity has significantly decreased with the increase in tea consumption, but it’s being rekindled now in the 21st century.
Preparation:
- In a medium saucepan, combine the honey, cloves, cinnamon sticks, ginger, blackberry jam, water or wine, and nutmeg, along with the mint leaves and chili peppers, if using.
- Slowly bring the mixture to a boil over a medium heat, stirring frequently until the honey and jam are completely dissolve. Remove from the heat.
- Let the sbiten’ reduce to room temperature. Strain the liquid through cheesecloth, pressing on the solids, and transfer to an airtight container or a bottle. Refrigerate and reheat when serving.
