Ingredients

2 medium potatoes (cooked, peeled and diced)
2 tart Granny Smith apples (peeled and diced)
2 carrot (cooked, peeled and diced)
1 medium onion minced
2 medium dill pickles diced
3/4 cup pickled herring or sardines
1/8 tsp Pepper
2 cups beets cooked, peeled and diced
1 tsp dill chopped
Sour Cream Dressing:
1 c sour cream
1 Tbl. Lemon Juice
2 tsp beet juice
1/4 tsp Sugar
Whipped Dressing (alternative):
1 c heavy cream
2 Tbl Lemon Juice
2 tsp beet juice
dash salt and sugar

This is a dish you can see everywhere, and it carries a long Finnish tradition. It was first eaten in 18th century in upper-class homes, spreading to the common people in the 19th century.

How to Make Rosolli:

  1. Add all the diced vegetables (except the beets) and herring and toss.
  2. Just before serving, add the beets. Gently toss.
  3. Serve chilled in a salad bowl lined with crisp lettuce with a generous spoonful of dressing.
  4. The dressing can be mixed in or served on the side.
