1 c sour cream

1 Tbl. Lemon Juice

2 tsp beet juice

Whipped Dressing (alternative):

1 c heavy cream

dash salt and sugar
Directions
This is a dish you can see everywhere, and it carries a long Finnish tradition. It was first eaten in 18th century in upper-class homes, spreading to the common people in the 19th century.
How to Make Rosolli:
- Add all the diced vegetables (except the beets) and herring and toss.
- Just before serving, add the beets. Gently toss.
- Serve chilled in a salad bowl lined with crisp lettuce with a generous spoonful of dressing.
- The dressing can be mixed in or served on the side.
