Ingredients

Water
1/2 lb pork belly cut into thin strips
1 small onion sliced
5 cloves garlic minced
2 small tomatoes sliced
1 tbsp sauteed bagoong
1/4 lb long beans (sitaw) cut into 2 inch length
10 pieces okra cut in halves
1/2 small kalabasa cut into cubes
1 medium ampalaya sliced into bite size pieces
1 large eggplant cut into bite size pieces
1/2 tsp Ground Pepper to taste
1/2 tsp Salt to taste
1/2 lb shrimps peeled and deveined

Pinakbet is a Filipino dish made from mixed vegetables in shrimp sauce also known as Pakbet. This Pinakbet recipe is a popular dish usually served at Filipino gathering where stir-fried vegetables is simmered in a rich flavor of pork, shrimp and shrimp paste.

How to Make Pinakbet:

  1. Using a wide pan, add 1/2 cut water. Add pork pieces and cook over medium low heat until water evaporates and turns into its own oil. Continue cooking until pork turns slightly brown while stirring occasionally. Add more water as needed.
  1. Adjust heat to medium-low. Add onions, garlic and tomatoes. Cook until soft for about few minutes. Add bagoong. Stir and cook for a minute. Add long beans and cook for a minute. Add okra and cook for a minute. Add kalabasa and cook for a minute. Add ampalaya and eggplant. Stir and cook for about 3 minutes while stirring occasionally.
  2. Season with ground pepper and salt. Add 1 cup of water and bring into a quick boil. Reduce heat to low and cover pan. Continue to cook until vegetables are tender yet crisp for about 3-5 minutes while stirring occasionally.
  3. Add shrimps and gently stir to combine. Allow shrimps to cook for few minutes while stirring occasionally. Remove pan from heat and transfer in a serving dish. Serve with hot steamed rice and enjoy!
