2 turkey legs (preferably sliced)
5 cloves garlic
2 medium onions
200 ml White Wine
Olive Oil
orange juice or lemon
orange zest or lemon
potatoes or sweet potato in slices
1 bunch coriander or parsley (optional)
Other herbs (optional)
salt flower

How to Make Perna de Peru de Natal:

  1. In a mincer or with the help of a magic wand, put the olive oil, garlic, parsley, paprika, juice and zest of an orange, salt and pepper.
  2. Chop well.
  3. On an oven tray place the turkey leg on a tray and cover well with the paste.
  4. Cover the meat with plastic wrap and put in the refrigerator for a few hours (preferably do this the day before.)
  5. Preheat the oven to 180° C.
  6. Add the onions in half moons and drizzle with white wine.
  7. Bake for about 1 hour 30 minutes then cover it with the sauce.
  8. Serve with boiled or baked potatoes or sweet potatoes.
