4 fresh figs

4 tbsp ricotta cheese

1/2 orange orange juice

1/4 tsp cardamom powder

1-2 tbsp agave nectaror sweetener of your choice

Garnish:

1 tbsp pistachiostoasted and finely chopped

1/2 orange zest

My recent food haul Waitrose & Partners included these gorgeous figs which I stuffed with ricotta, orange, cardamom and pistachios creating the perfect summer dessert or appetizer. It’s an easy and quick recipe to make and tastes absolutely delish!

How to Make it:
- Cut off the tip of the figs, then cross-cut each one at the top, being careful to not cut all the way to the bottom. Lightly squeeze the middle of each fig in order to open the top up
- In a bowl make the ricotta mix by combining all the ingredients together. Start with one tbsp of agave nectar, taste and adjust according to your preference
- Carefully fill the centre of each fig with the ricotta filling, you can pipe the filling in or simply use a small spoon.
- Top each fig with the pistachios and orange zest and eat immediately!
