Possibly the most famous of Canadian desserts, this no-bake treat is named after the city in British Columbia where it originated. Simply made from a coconut-graham cracker-nut crust, custard filling, and chocolate ganache topping, its’ gooey sweetness is world-renowned. It’s a perfect combination! I love a good no bake recipe and this one is a goodie!
How to Make Nanaimo Bars:
- Melt ½ cup of butter. Stir in the sugar and cocoa powder until well mixed.
- Add the beaten egg and stir until thick. Stir in the graham wafer crumbs, coconut, and almonds.
- Scrape the mixture into a parchment paper-lined 9-inch baking dish. Press firmly to create an even bottom layer.
- In a large bowl, cream together ½ cup of butter, the cream, and custard powder. Gradually add the icing sugar, beating until light and fluffy. Spread over the bottom layer, smoothing the top with a spatula or palette knife. Chill for 1 hour.
- In a clean pot, heat the milk until scalding, quickly mix in the chocolate, and stir vigorously until it is melted. Let cool slightly. When cooled but still liquid, pour over the custard layer.
- Cover and refrigerate for several hours or overnight.
