Muddling is a great way to extract flavours from drink ingredients, citrus fruit are all too often treated as garnish rather than ingredients. It seems to me such a waste to have all that beautiful juice and aromatic oil locked inside the fruit, just floating in the glass for the duration of the drink and then it simply be discarded.

  1. Place the ingredients to be muddled in the bottom of the glass before any ice or liquid is added, (sugar syrup in some cases may be added).
  2. Using the end of a rolling pin or pestle or any rounded implement that will fit in the glass, press down firmly and turn the implement as you do.
  3. Do this repeatedly until all the flavours from the various ingredients have been released and mixed together.
