Ingredients

For Meat:
1 lb. Meat
1⁄2 c rice cooked just under half way
1 Onion
2-3 cloves garlic
Salt and pepper to taste
For Sauce:
1 package coleslaw
1 onions
1 bell peppers optional
2 cans tomato sauce
1⁄2 c sour cream
Salt and pepper to taste
paprika to taste
Sugar to taste
Oil for frying

We love holubtsi (stuffed cabbage leaves), but who has time? ☺️ Solution: lazy holubtsi, or unstuffed cabbage roll casserole! Yum! 😋

How to Make Lazy holubtsi (Lazy Cabbage Rolls):

  1. Dice the onion and pepper, and, if you are using one, grate the carrot on the large side of the grater.
  2. Sauté the onions until just golden brown.
  3. Add the pepper and carrots and then the coleslaw. IS THIS RIGHT? COLESLAW IS IN MAYONAISE
  4. Season well. It doesn’t need to cook for a long time (usually sauté for as long as it takes you to grind the meat).
  5. Grind the meat, onion, and garlic together. Add the rice, season, and mix well. Roll the meat into a ball, make them just a tad bigger than a golf ball.
  6. You can use a cast iron pot or any other pan. Line the bottom of the pan with the cabbage mixture. Then a layer of meatballs, then cabbage mixture again. You will have a different number of layers depending on the size of the pot. I recommend to finish with the cabbage mixture so the top layer of meat doesn’t dry up while cooking.
  7. Mix the tomato sauce together with the sour cream and season the mixture. You can use salt, pepper, paprika, and add a little bit of sugar to kill the acidity of the tomato sauce. 
  8. Pour the sauce over the layered meat and cabbage mixture. Make sure to cover the whole thing.
  9. Bring to the boil, then turn the heat down to medium; it should visibly simmer. Cook for an hour.
  10. Serve. Enjoy!!!
