Ice trout is an easy-to-make delicious appetizer that celebrates the spirit of Estonian cuisine – using raw, sustainable ingredients that nature has to offer.

The recipe was provided by Chef Ants Uustalu, Head Chef of Ööbiku Gastronomy Farm, Estonia.

How to Cook it:

  1. Deep freeze the whole trout. For serving cut very thin slices.
  2. Mix wasabi paste, mayonnaise and soy sauce.
  3. Deep fry shrimp chips.
  4. Serve as on the picture
