The east coast Canada donair, made famous in Halifax, is made with a signature sweet sauce: garlic, vinegar, sugar, and condensed milk! This dish is so popular in Nova Scotia, it has been named their official food since 2015 and can be found all over the East Coast of Canada and truly is a cultural icon. The addition of the condensed milk to the sauce is what makes the east coast Donair different from all others!

Makes 4 servings

How to Make Halifax Donair:

  1. Make sweet sauce by blending together the evaporated milk, sugar, vinegar and garlic. Set aside and chill.
  2. To prepare the meat, add spiced and meat to the bowl of your stand mixer and mix using the dough hook for about 5 minutes on medium low.
  3. Form the meat into a loaf that’s about 8 inches in length. Make sure to knead it and roll the loaf so that it’s as tight as possible and all the air is out of it. Cover the loaf tightly with aluminum foil, rolling the ends tightly, so that it forms an even log.
  4. Prep oven and baking sheet: Preheat the oven to 350°F. Line a baking sheet with aluminum foil. Place the log on the baking sheet, and bake for 1 ½ hours. Let it cool before slicing.
  5. To assemble sandwiches, shave meat, and place on warmed pitas. Top with chopped tomatoes and onions, then drizzle with donair sauce. Roll up the pita tightly and enjoy!
