How to Make Coconut Candy:
- Break the coconut and remove the shell. Save the coconut water. Scrape the flesh off the shell and finely grate the it using a cheese grater.
- Heat 2 cups of water in a pot, add the saved coconut water and the sugar. Then add the grated coconut flesh. Cook on a low-moderate heat, stirring continuously until browned and all the water has evaporated. Add the maple syrup and stir well.
- Then, while still warm, carefully spoon the emerging coconut candy into your preferred shape/mould. Set aside to cool. (The candy in this recipe has been made into flat, round biscuit shapes, see picture.)
- Serve the candy warm with ice-cream.
