100 gr Brown Sugar more or less as preferred
4-5 tablespoons maple sauce or honey (more or less as preferred)

Coconut candy is one of the oldest traditionally made sweets in West Africa. This recipe helps you to discover how to create a really delicious dessert the best of ingredients—the coconut.

Preparation Time: 10 minutes.

Cooking Time: 20 minutes

Serves: 2-3 people

How to Make Coconut Candy:

  1. Break the coconut and remove the shell. Save the coconut water. Scrape the flesh off the shell and finely grate the it using a cheese grater.
  2. Heat 2 cups of water in a pot, add the saved coconut water and the sugar. Then add the grated coconut flesh. Cook on a low-moderate heat, stirring continuously until browned and all the water has evaporated. Add the maple syrup and stir well.
  3. Then, while still warm, carefully spoon the emerging coconut candy into your preferred shape/mould. Set aside to cool. (The candy in this recipe has been made into flat, round biscuit shapes, see picture.)
  4. Serve the candy warm with ice-cream.
