Ingredients

1 kilogram chicken cut into pieces
1 ancho peppers
10 guajillo peppers
1 morita pepper optional
1 pinch oregano
1 pinch Thyme
1⁄2 teaspoon cumin
3 Peppercorns
2 Bay Leaves
3 clove
2 cloves of garlic
1 pinch Salt to taste
500 gr cactus paddles cut into strips
1 cup Onion cut into crescents (julienne)

Mixiote is one of thousands of the most popular traditional Mexican dishes. It can be filled with beef, chicken, fish, mutton, pork, or shrimp. The preparation is somewhat tedious and requires a lot of patience, but it’s worth a try.

How to Make Chicken Mixiotes:

  1. To prepare the chicken mixiotes, boil 3 cups of water, add the seedless and stemless chilies and let them soften for a few minutes. Tip: it is important that the chilies do not have seeds because the marinade is not going to strain.
  2. When the chilies are already soft and warm, mash them for 3 minutes with the 3 cloves of garlic, oregano, thyme, cumin, cloves, fat peppers and bay leaves.
  3. Also add two cups of the remaining water from the cooking of the chilies.
  4. Marinate the chicken pieces with the marinade and let them sit for at least 1 hour. You can let the chicken marinate for one night to reinforce the flavor with the marinade.
  5. After the marinating time, spread an aluminum leaf, place a bed of chopped cactus paddles and onions and add salt to taste. Tip: if you prefer to make the chicken mixiotes with the mixiote leaf, you will have to moisturize it for at least 10 minutes before starting to assemble your mixiotes.
  6. Place a piece of chicken and add more marinade if you prefer. Season with a little more salt.
  7. To wrap, fold the ends inwards, first two of the sides and then the remaining two. Make sure the fold is up to avoid spills and cook the steamed chicken mixiotes for 1 hour over low heat. Tip: if you use the mixiote sheet, wrap making a kind of sachet and secure it with cotton thread.
