German’s love potatoes… and this dish celebrates the potato! You can make this dish with just a few ingredients – potatoes cooked in clarified butter something with onion and salt and pepper, and a bit of cream cheese. Often, in Germany, this dish is made with a special fresh herb cheese, often made at home with herbs from the garden. This dish is the perfect lunch, served with some salad and a glass of German white wine.
Preparation:
- Boil the potatoes and let them cool (preferably from the day before). Peel and cut in slices.
- In a coated pan fry the potatoes with clarified butter until crispy and add an onion cut into cubes and sauté. Season with pepper and salt. Salt the potatoes right at the beginning for a better crust.
- Mix the quark with the grainy cream cheese in a bowl, add a little salt and pepper. Wash and chop the herbs, cut the onion and garlic into small cubes. Add lemon zest.
- Mix everything together and, depending on the desired consistency, add a little cream if necessary.
