Nalysnyky (Ukrainian Crepes)

Crepes are enjoyed all over the world. What is special about Ukrainian crepes, ornalysnyky, though is the traditional cottage cheese filling. It enhances the plain taste of the fried, tender batter and marries perfectly with jam, honey, or raisins.

All Ukrainians swear by their syrnyky (thick, fluffy pancakes) and nalysnyky (thin, stuffed crepes) and frequently make them both at home. It is hard to say which of these desserts is more palatable. With nalysnyky, you have more freedom of culinary expression, though.

You can mix in sugared cherries, dried apricots, cubed pineapples, moist poppyseeds, or caramelized apples – any leftover and forgotten pantry gems. Experiment and play around.

Ingredients:

    For the crepes

    • 2 eggs
    • 1 pint milk
    • 2 tbsp vegetable oil
    • 1 tbsp sugar
    • 7.5 oz plain flour
    • 1 tsp baking powder
    • a pinch of salt

    For the filling

    • 1 oz walnuts
    • 1 lb cottage cheese
    • 2 tbsp heaped of honey

    For the berry sauce

    • 11 oz frozen mixed berries
    • 3 tbsp orange juice

    Instructions
     

    How to make Nalysnyky:

      For the crepes

      • Whisk the eggs, sugar, and salt in a large bowl until the mixture is light and fluffy.
      • Add the vegetable oil and milk. Whisk well.
      • Add the baking powder. Gradually sieve in the flour.
      • Beat well until the mixture is smooth and runny.
      • Grease a frying pan with vegetable oil and place on medium heat.
      • Pour a small amount of batter in the pan. Swirl it quickly so that the pan’s surface is covered in a thin even layer.
      • Fry on medium heat (approx. 1 minute) or until golden brown. Turn the crepe over with a spatula and repeat for 30 seconds.
      • Continue this process until you have used up all the batter. Set your crepes aside.

      For the filling

      • Finely chop walnuts in a food processor. Add the cottage cheese and honey. Blend until properly combined. Set aside.
      • Heat a saucepan and place the berries and juice inside. Once the berries begin to simmer, reduce the heat to low and simmer for 5 minutes or until a saucy consistency. Set aside.
      • Spread an even layer of the cottage cheese filling across the top quarter of your crepe and then roll the crepes.
      • Pour the warm berry sauce over the top and serve with sour cream.
